I’ve been meaning to share my recipe for the most perfect herb crusted prime rib that you’ve ever tasted for awhile now. I mean, like, years. But it’s not really a cheap thing to just make on a whim in the afternoon just for a blog post, so I had to wait until New Year’s Eve before I could even take a photo.
Every year on New Year’s Eve, I make prime rib for dinner. I like to end the year with a bang – and a big expensive, super filling meal that leaves everyone in a food coma is the perfect thing to end the year on! It also doesn’t hurt that rib roasts are usually deeply discounted that time of the year, so I always end up grabbing one anyway.
I’ve had family members call me on the phone and ask me to walk them through the way I prepare my roast, and I have finally decided to just sit down and write it all down, step by step, exactly how I do it. Normally with a food post, I would create a printable recipe, but not this time. I’ve decided to approach my method more like a normal blog post. The wet El Nino winter the weatherman has been promising us for months is finally here in San Diego! I might be one of the only people here that loves this kind of weather according to my Facebook page of people complaining that their backyards are now lakes and they’ve finally got the pool that they’ve always wanted. The last time we had a crazy El Nino winter was almost 20 years ago and to this day it’s still one of my favorite experiences with weather that I’ve ever had. Something about bundling up and watching the rain pour outside, splashing out of the gutters, flooding the planters and sidewalks, rushing down the embankment is oddly comforting to me. It makes me want to drink hot cocoa, and bake cinnamony things. It makes me want to create simple, rustic meals that warm you up on the inside, like this delicious stew.
Cash is the best gift. Seriously. When my mom asked me what I wanted for Christmas, I just told her cash. Gift cards are great too, but cash allows you to use it on anything you need. I had planned on spending my Christmas Cash on a brand new camera, but my amazing husband surprised me with it as my Christmas gift! (Isn’t he the best!?) So with a nice chunk of change for Christmas in my hands I headed to Sephora because I had a list of new pretties I had been pining over.Continue Reading
