I used to live in Los Angeles in my early 20’s. This was way before I knew how to cook and I survived with frozen meals and takeout. I used to make a mean pot of IKEA meatballs back in the day, for real guys. It was pretty bad, so I spent a lot of days watching The Food Network, and a lot of nights ordering takeout.
There was one place in particular that I loved ordering from, a little Mediterranean place in Venice. It was the place that transformed my palate, because it got me out of my comfort zone and opened me up to new cuisines. Ever since then I have LOVED Mediterranean food. One day I’ll make it to Greece and gorge myself on olives, but until then I will just have to be OK with making Mediterranean recipes at home.
One of my favorite dishes is a super easy couscous recipes that can be made in under 10 minutes. It’s delicious, bright and is great warm as a side dish, or served cold as a salad. And the best part is that you can add as many or as few of your favorite Mediterranean ingredients as you want!
I love to use lots of olives – Greek green, kalamata – the more the better! I only buy Mezzetta olives, Mezzetta’s new artisan olives are perfect for this recipe! I also love to load it up with fresh lemon juice, lemon zest and artichoke hearts. A sprinkle of fresh parsley on top brings all those fresh flavors together!
You guys, this is seriously the most simple side dish ever and would make a perfect addition to any holiday table this season. If you’ve got 10 minutes, you can make this simple, savory dish!
- 2 cups chicken stock
- 2 cups couscous
- ½ cup Mezzetta Artisan Olive blend, pitted and sliced in half
- 1 can artichoke heart quarters, drained
- Juice and zest of 1 lemon
- Fresh Parsley
- Pour chicken stock into a large stock pot and bring to a boil.
- Add artichoke hearts, olives, lemon juice and ¾ of the lemon zest, stirring to mix.
- Remove from heat and add couscous, stir to incorporate.
- Cover and let rest for 5 minutes.
- Fluff the couscous with a fork and top with remaining zest and parsley.
- Serve warm or chill and serve as a salad
