Every day that I pick my daughter up from school and we walk through the front door, the first thing she says to me is “Can I have a snack?”. Sound familiar? And then there is me, loaded with her school work, and backpack, my purse and my bags from the day I feel pretty overwhelmed with the request and huff, “Can I put everything down first?”.
I so wish I could be one of those Pinterest moms (that seems so ironic, doesn’t it?) that does everything perfectly, but the truth is I am just a regular mom. No, really. But when it comes to my kids, I like to move heaven and earth to make them feel special, so I get a little “Pinterest-y” every now and then.
Most times I hand them an apple, or a granola bar and call it a day. but every now and then I like to make them something fun, and wholesome, and creative and easy. Yes EASY! Because easy snacks, are my most favorite kind of snacks. How do easy yogurt parfaits sound?
This little after school snack is seriously the easiest. And it’s perfect for feeding 2 or 12, so no worries there if your brood brought their friends home with them. And it’s insanely affordable too.
Affordable being the key words right? These are kids after all… no need to pull out all the show stopping tricks.
My daughter is somehow the pickiest person I know. She told me she didn’t like my Spiced Apple Cake that much because “the apple chunks are too big”. For real kid?
She picks the green parsley flakes off garlic bread and insists on chicken nuggets for every meal. Yeah, that’s my kid.
But she does like yogurt and she loves dry cereal, so making a simple yogurt parfait bar for her and her friends is pretty much the coolest thing ever to her. And like I said, I like easy.
I went to my local Albertsons the other day, because they are having their huge Stock Up Sale and I grabbed tons of sale items, making my parfait bar affordable too. I found most everything in the cereal aisle, and the yogurt in dairy.
And because I am using granola bars, yogurt and cereal, they can double as breakfast and lunch box items too. Aren’t I so smart?
All you need to do to set up this fun snack bar is:
- Place your mix-ins into some cups
- Set out some yogurt (and even some fresh fruit if you wanted to)
- Grab some spoons.
- I crushed the Nature Valley bars into a granola consistency for easier munching, but you could use them as dippers too!
- You can even spread the yogurt on the granola bars, sprinkle with cereal and pop into the freezer for 10 minutes for a fun “ice cream” treat!
Then let your kids go crazy, adding all the goodies into their yogurt parfaits as they want. My kids love anything that is breakfast at non breakfast times, so this is a huge hit in our house. And since you mix it right in the yogurt cup, they are insanely portable and clean up is a breeze!
