As a kid my dad use to make some pretty rad grilled cheese sandwiches. Lots of butter and American cheese on butter top wheat bread. It made my sister and me squeal with glee. It was always a delicious option for an after school snack, or a Sunday afternoon lunch. We used to make them on our old sailboat, anchored in Avalon on Catalina Island. Even now as an adult, I make them for my own kids. In fact my husband is the self proclaimed “Grilled Cheese Expert” around these parts.
You all know how much I love grilled cheese sandwiches!
I decided to up the ante with my favorite “After School Special” treat by upgrading a few of the ingredients.
Come on, you know me! I love to fancy stuff up.
So I replaced the American cheese with sharp cheddar and smoked gouda. Sourdough upgrades the wheat bread and a thick layer of Parmesan cheese tops the buttered sides.
Call me crazy, but if I am going to do it, I am going to do it right.
The Parmesan cheese melts and toasts, creating the most deliciously cheesey crunchy crust and adds the most amazing taste. Smoked gouda adds an unexpected smokey flavor, while the cheddar rounds it out.
The flavors all compliment each other beautifully and dipped into some creamy tomato basil bisque just takes it over the top.
Seriously, how delicious does this look!?
You can also take this to an even higher level of awesome by added slices of bacon, avocado, fresh basil or tomatoes to the inside. Once you get there you’re elevating this after school special to a simply complex dinner option. Perfect for a chilly fall evening!
My husband and I have been having a lot of “Movie Dates” lately at home. Next week we’re watching all three Godfather movies since I just grabbed the trilogy on Amazon. This sandwiches would be a great way to have dinner and a show at home.
I just can’t.
