Here in San Diego it’s been INSANELY hot – I have no idea what’s going on. A storm is coming from the west and bringing in this overcast blah that makes the days really humid and sticky, and it feels like there is NO RELIEF at all from it. So we did what needed to be done and headed to my mom’s house. At any given time in the summer, you can find a ton of people at my mom’s house enjoying the cool pool and warm sunny weather, and it was no exception the other day. I was craving something fresh and spicy, so I brought over all the ingredients to make White Tex Mex Chicken Chili for everyone!
I have never met anyone that hangs out at my mom’s house not down for some free food. Usually these impromptu pool parties turn into potlucks – everyone calling everyone to tell them to come by and bring something to share.
I try to create meals that not only I would enjoy, but my friends and family too, though it’s not always super easy to do. I know I talk about my picky family a lot, but I think I sometimes fail to represent how picky I can be too. I love pretty much all food – which doesn’t sound super picky, but it can be. I like to make sure that what I am eating nourishes me, has quality ingredients and tastes amazing. Sometimes that can be hard to find!

This recipe, by YouTube personality, Laura Vitale is a great twist on a classic chili, but switching red tomatoes for green tomatillos, white beans for kidney beans, chicken for beef and SPLENDA for regular sugar. It’s a fantastic balance of sweet and spicy! And it’s really customizable – add avocado, sour cream, or queso blanco – to make it your own! You might want to double this recipe if you’re having a party like we did – and offer fun toppings for an easy DIY Chili Bar!
- 1 medium onion, diced
- 2 cloves garlic, diced
- 1 tablespoon olive oil
- 7 tomatillos, diced
- 1 ½ cups low sodium chicken broth
- ½ cup water
- 1 teaspoon ground black pepper
- 2 15-ounce cans white beans, drained and rinsed (we used Cannellini)
- 1 4.5-ounce can chopped green chilies
- 2 teaspoons green hot pepper sauce
- 1 cup fresh or canned corn
- 1 cup cooked boneless, skinless chicken breast, diced
- 1 tablespoon fresh cilantro, chopped
- 2 packets SPLENDA® No Calorie Sweetener
- Sauté onion, garlic, tomatillos and olive oil in a 4-quart saucepan until onions become translucent. About 5-10 minutes
- Add chicken broth to saucepan and bring to boil
- Mix in ground pepper and SPLENDA® No Calorie Sweetener. Stir in white beans, green chilies, green hot pepper sauce, corn, and chicken. Bring to a boil and reduce heat. Simmer for 30 minutes. Season to taste. Top with fresh cilantro.
Lunch was SO yummy – here’s a shot before we dug in and polished it all off! Everyone thought it was so delicious and for a bit of extra yummy, I added fresh, ripe avocado slices to the top. I think it really took it over the top! After lunch, to beat the heat, so decided to take a dip in the pool.
I love to do a lot of low impact exercises – I take dance classes, do yoga, pilates, bike around San Diego, and of course swim! It’s important to get out and getting moving a bit, and in a beautiful city like San Diego, there are so many fun opportunities to take advantage of!
The weather here makes it beautiful almost year round – and even though the storm made it hot and sticky – the pool was amazingly refreshing.
Granted I had to put the camera down to enjoy the pool – for some reason water and electronics don’t seem to work too well together, but as always – swimming around in my mom’s pool was refreshing and fun, and a great way to get in a low impact workout to go with our healthy lunch!
