There is a restaurant here in San Diego called The Fish Market, that is an institution. My family has been eating there for years and recently the downtown location suffered a devastating grease fire that burned the top floor and caused over a million dollars in damage. Suffice to say, the restaurant is currently closed. I am not much of a fish fan, but I still loved going there for their Warm Spinach Salad with Kalamata Olives and Feta – which I think is a testament to that fact that I would brave a fish restaurant just for a salad. It’s that good. So I wanted to share the recipe to make this at home, since I won’t be visiting there for a bit and I might need a fix.
This salad is so easy to make, has a lovely balance of sweet onions, tangy olives and creamy feta. It’s seriously so good. I was craving it this weekend while I was out of town in LA, and grabbed a tub of Nikos Feta on my way home – not that I don’t have feta here in San Diego – but when you’re craving it, you’re craving it.
Seriously, so creamy, so yummy. Nikos Feta has such an amazing, intense flavor, I don’t have to use much to get that creamy tang I am looking for – which means less calories too. And the flavor doesn’t over power the recipe – it just enhances it. Are you ready for this deliciousness?
Warm Spinach & Kale Salad with Kalamata Olives and Feta
- 1 bag of Baby Spinach
- 1 bag of Baby Kale
- 1 Red Onion, thinly sliced
- ½ cup pitted Kalamata Olives
- ½ cup Nikos Feta Cheese
- Olive Oil
- Red Wine Vinegar
- Fresh Cracked Black Pepper
- In a large skillet, warm up some olive oil.
- Saute onions, olives and feta until onions start to caramelize and cheese melts.
- Remove from heat and add a few splashes of Red Wine Vinegar.
- Toss spinach and kale in the mixture with tongs until it begins to wilt. It will shrink down quite a bit.
- Serve and top with additional fresh feta and fresh cracked black pepper.
I die! This salad is so good! It’s a great little quick meal – since the cook time is under 10 minutes – add some chicken to dial it up a notch if you wish. It’s also a great starter salad and a nice impressive change from a typical house salad for a dinner party.
Look at all the yumminess! It’s so simple – yet complex in the subtle flavors. Try it for your next meal! It would be great with kebobs or schwarma!
