Oh lordy lordy. I have been wanting to make some Saltine Bark for so long. I’ve seen it all over Pinterest and I have been dying to try it. And you know what? It’s super easy to make and it really is like snack crack, because OMG get it out of my house! So I took it to the salon, because we just moved and we needed a little “Pre Grand Re-Opening” party, just for us, you know? And that
crack Salted Toffee Saltine Bark with Pistachio and Cranberries? It was GONE in an hour. AN HOUR! That’s a true testament to how good it is! And then everyone wanted the recipe and I told them they had to wait until Wednesday.

Well maybe not, but for real, it’s so good.
And it really is the easiest and one of the prettiest little snacks for a party. Even if it’s just for a few people, and you wanna throw it together last minute, because not all parties have to be themed out ragers! Sometime just hanging out with coworkers, chowing down on some Saltine Bark is all you need!
We’re goofy at the salon, ya know, when we’re not doing people’s hair. Did you know that’s what I did for my “real job”?
I’ve been doing it for 15 years! Ack! But as much as I LOVE being a blogger, and working from home, the salon job pays the bills right now. So, just in case you need to have an easy night in, with the girls, or wanna just surprise some coworkers with a little impromptu party and have everyone say “Aww. What’s all this for?” read on… cuz I have some super simple ideas and tricks for you to throw a bash in under an hour!
So cute, right? Easy peasy and work friendly! That’s a simple sparkling “mocktail” on that cake plate – made with white grape juice and lemon-lime soda! It looks fancy and highfalutin’, but it’s really just easy and kid friendly! And super yummy!
Sparkling Mocktail Recipe
- 1 2-liter of Lemon Lime soda
- 1 bottle of white grape juice
- Strawberries for garnish
Fill a large pitcher with ice, and pour the lemon-lime soda and white grape juice into it. Mix well and let chill. Serve in wine glasses, garnished with a strawberry!
Anyway, back to this bark – and this recipe.
I opted to try out some of the new DOVE® Fruit to add some different flavors to this traditionally simple bark. I sort of married Saltine Bark and Chocolate Bark, and they had a delicious baby and named it Salted Toffee Saltine Bark with Pistachio and Cranberries. Because yum.
While I was at Walmart last week, I found these in the candy aisle, right by all the other chocolate covered stuff.
Salted Toffee Saltine Bark with Pistachio and Cranberries
- 2 sleeves of Saltine crackers
- 1 bag white chocolate chips
- 1 cup shelled pistachios, chopped
- 1 cup dried cranberries
- 1 cup DOVE® Fruit Dark Chocolate covered Cranberries, chopped
- Large Flake Sea Salt, like Maldon
- 1 stick of butter
- 1/2 cup light brown sugar
In a medium sauce pan, melt your butter and brown sugar together and let it come to a boil. While it’s melting, line a cookie sheet with parchment paper and line up as many Saltine crackers as will fit. When your toffee mixture has come to a boil, stir until caramel colored, about 5 minutes. Add a healthy pinch of sea salt and stir. Don’t use table salt as it’s saltier and just different, and it will throw off the taste.
Pour the toffee mixture over the top of the crackers carefully, and using a spatula, spread it over the crackers evenly. Put the pan in a preheated 400* oven for 5 minutes to help the toffee melt, and coat the crackers evenly.
Over a double boiler, slowly melt the white chocolate until smooth. Pour over the crackers and smooth with a spatula.
Sprinkle the pistachios, cranberries and DOVE® Fruit over the stop and finish with a quick garnish of Maldon salt.
Place the cookie sheet in the fridge or freezer to set and then break into pieces to serve!

A great way to spruce up a party without a huge budget, or amount of time to spare is DIY Confetti! I don’t know about you, but I always have colorful paper laying around. I love the paper confetti look, but I’d rather not spend a ton of money on it. So I DIY it! And I always have some simple Garlands and Buntings around for easy party decor if need be!
Easy right? A cute and fun party for work for under $100 and in under an hour! Simple and elegant!
