You know the worst part about not having a gallbladder? My tummy can’t handle fatty foods anymore. Like within an hour I am in severe pain and it’s… well it’s not fun and it’s not pretty. The problem I have with that is most foods contain even trace amounts of fat, and my family tends to enjoy those meals the best. I have had to drastically change my eating habits, while still focusing on my families lifestyle. Because they don’t have my issues I have to find options that work for us as a family and fit into our lifestyle as it is. You know my family is picky, which means I have to be creative!
Luckily for me, I am incredibly creative! I have found that smaller portions, low fat, whole grains, lots of greens, plant based options and complete proteins don’t trigger my illness. So the new Boca Essentials line of vegetable- and grain-based patties really hit the spot for me. Low in fat, high in flavor, and I am able to really amp them up to get those familiar flavors without that sinking feeling in my tummy.
Breakfast around here can be tricky in the low fat options. We are bacon lovers for sure. I have to limit myself to eating bacon and not over doing it, which can be so easy to do! On a usual day, I opt for almond milk protein shakes because they are quick and easy, but when I am looking for something to make myself feel like I am indulging, I reach for the skillet and whip myself up some Breakfast Tacos.
Being from San Diego, growing up, Breakfast Burritos were a staple in our diet. It’s the perfect cure for a hangover and is so delicious! If you ever find yourself in San Diego, do me a favor and grab a Breakfast Burrito (any time of the day is fine) and enjoy it for me. Bacon, eggs, french fries and cheese, in a soft flour tortilla the size of a baby blanket. Delicious! But because I can’t even think about eating that without pain, let me share my recipe for Easy and Healthy Breakfast Tacos, made with Boca Essentials Breakfast Scramble patties. So easy, so delicious and you won’t hate yourself an hour later!
- 2 Boca Essentials Breakfast Scramble patties
- 2 Eggs, scrambled
- ¼ cup of shredded cheddar cheese
- 1 handful of baby spinach
- 4 Corn tortillas
- In a medium skillet, grill the Boca Essential Breakfast Scramble patties, according to package directions. Remove from the pan and cut into bite sized pieces.
- In the same pan, over medium heat, lightly spray with non-stick cooking spray and pour the eggs in. Lightly push around to begin to scramble, while adding in the Boca Essentials patties, and the spinach, allowing the eggs to set up and the spinach to wilt.
- Remove from heat and sprinkle with cheese.
- Heat the corn tortillas on a skillet until toasted and lightly crispy, fold over into a taco shape, and stuff with the egg mixture. Top with hot sauce if desired. Enjoy!
The Breakfast Scramble variety has potatoes, scrambled eggs and vegetables! A single, 10-ounce pack contains four patties and retails for $4.29 at most major retailers, in the freezer section. I love that these patties taste great and make me feel full, and not sick. That’s a HUGE plus for me, because those types of meals have been few and far between lately. Less meat in my diet is just going to have to happen, and it’s nice that these sort of options are available to me!
