Last Friday was Audrey’s last day of school. This means a variety of things, but mostly that my life is going to go from “Busy!” to “OMG INSANELY BUSY!” My kids don’t understand the whole “work from home” thing. They figure if I am home that means I am free to entertain them 24/7 by taking them to the fair, the park, swimming, movies, you name it. Sadly, I have yet to find a way to be a single income family and still keep a roof over our head. I’m working on it! So when my life gets so insane that I am running ragged, I need a way to refuel on the go.
I try to keep snacks with me so while we’re out and about we don’t get rundown, but sometimes with 2 rambunctious girls, mama needs a treat. (Here’s the proof) So, if I’ve been a good girl, I will reward myself with a SNICKERS ® 2-to-go or an ice cold Dr Pepper. I love the SNICKERS ® 2-to-go because you can eat one and twist the package up and save the other half for later (or for whatever daughter does her chores first…)

but they are also crazy.
We are planning on taking a few road trips this summer and so I decided that I needed to make something that would fare well on the road. It needed to be sweet and salty, crunchy and satisfying snack. It needed to be on-the-go road food. I set out to make some caramel corn, using the delicious flavors of SNICKERS, and I am pretty impressed with my results.
I dunno about you, but something about caramel corn just screams “SUMMER!” to me. Maybe it’s that it reminds me of the country fair, or that summer is sort of just an excuse to eat whatever you want because you’re on vacation, but whatever it is, it works. My caramel corn is light and delicious, crunchy, sweet, salty, everything you could want in a caramel corn. It’s perfect to make ahead and take with you for a quick on the go snack, or just munching a bowl while watching a movie.
SNICKERS CARAMEL CORN
- 2 bags plain microwave popcorn, popped with the seeds removed
- 1 cup packed brown sugar
- 1/4 cup light corn syrup
- 6 tbsp butter
- 1/4 tsp salt
- 1/2 tsp baking soda
- 2 tsp vanilla extract
- 1/2 cup peanuts
- 1 SNICKERS ® 2-to-go Bar, roughly chopped
- 1/2 cup chocolate chips, melted
Start by preheating your oven to 250*. Pop your popcorn, removing seeds and arranging it on a large baking sheet, lined with non stick foil or parchment. Sprinkle with peanuts.
In a large saucepan, melt your butter. Add light corn syrup, brown sugar, and salt. Stir until incorporated and it starts to bubble. Cook for 5 minutes or until a candy thermometer reaches 250*. Remove from heat and add baking soda and vanilla. Be careful of spatter.
Pour the caramel mixture over the popcorn and toss lightly to coat.
Place in the oven for an hour, tossing the popcorn every 20 minutes to evenly coat.
Heat chocolate chips in a glass bowl set over simmering water until melted. If needed, thin the chocolate with a small bit of coconut oil.
After an hour, remove the caramel corn from the oven, drizzle with chocolate and sprinkle with chopped SNICKERS ® 2-to-go bar.
Let cool and break pieces up before serving.
