Feeding a family of 4 gets expensive, I can only imagine what feeding a family of 8 or 10 would be like! I try my best to plan our meals ahead of time to save money, but it can be hard. My husband is not one for leftovers, so I often have to creatively disguise them into new meals.
One of my favorite ways to do that is taking a whole chicken and cooking it in my rotisserie. That bad boy is a life saver!
The next day, I take all the leftover chicken, dice it up and make chicken salad sandwiches for my husband’s lunches. It’s one of his favorites, and it’s so easy. We also take chuck roast, make shredded beef tacos one night, and use the leftovers for beef enchiladas later in the week. It’s a great use of leftovers and we all love them, but often times I am looking for new and different ways to use up my leftovers and I do not have the time or energy to put the effort in.
